With the amount of recent revelations and hype, I'm struggling to figure out how anyone could care about them.

The things that I'd like to see concerning Unohana: a flashback of when she was 1st Kenpachi, a reason why she moved on to healing and became the 4th Squad Captain, and her hax kendo in action.

Everything has a "just as planned" vibe to it.

On the right of Yama-jii... Could that be Zaraki? I've heard theories that he was one of the original Gotei-13 and got struck with amnesia somehow. In the latest chapter he seems to imply that he and Unohana go way back.

If he was one of the original Gotei-13 then he certainly left at some point. It would only make sense for him earn his place as Captain again considering the original 13 was formed 1000 years ago.
